An easy peasy fuss-free recipe that never fails to please. This recipe makes 8 so you may want to double it.
110 g ground almonds or desiccated coconut
75g caster sugar
1 egg white, lightly beaten
Heat the oven to 180°C. Put the ground almonds (or desiccated coconut) in a bowl together with the sugar and egg white. Stir to combine. The mixture should be firm, yet slightly sticky.
Roll small dessertspoonfuls of the mixture into balls, and place on a baking tray lined with baking parchment. Flatten slightly with a wet fork.
Cook for about 10 minutes, or until golden. Cool on a wire rack.
